[Hannah]: Photogenic Winter Salad
This is a good salad to take to a potluck dinner, because it is colorful, compact, and doesn't monopolize a plate like a green salad does. It is also good to eat right out of your refrigerator with a fork on day 2.
PHOTOGENIC WINTER SALAD:
1/2 red cabbage, sliced into fine shreds
2-3 full sized carrots, grated
1 orange, sliced into forkable pieces
1/2 red onion, sliced into salad-sized pieces
dress with oil, lemon juice, salt, a whisper of sugar, and cayenne pepper flakes.
VARIATION:
Instead of orange, add 1/2 cup golden raisins.
Instead of lemon juice, dress with vinegar and garlic.
