Caribbean bean and rice salad

This is one of the most precious things left behind by a boyfriend I lost long ago. A delicious recipe and you can make it the day before you want to serve it.

1/2 cup olive oil
1/4 cup apple cider vinegar
1 tablespoon Dijon mustard
1 teaspoon ground cumin
1 teaspoon minced garlic

2-1/2 cups cooked long-grain rice
1 15-ounce can black beans, rinsed & drained
3/4 cup chopped red bell pepper
3/4 cup chopped yellow bell pepper
3/4 cup chopped green onions

whisk the dressing together, season with salt & pepper
combine all ingredients, season with salt and pepper, cover and refrigerate
